Fumoir St-Antoine
Founded in 2002 by Serge Garneau and Johane Roy in Baie-Saint-Paul, Le Fumoir Saint-Antoine is dedicated to the artisanal production of smoked salmon and Arctic char, following an indigenous tradition on wooden boards. Renowned for their distinctive taste and texture, products from Le Fumoir Saint-Antoine are cold-smoked and dry-salted. This family-owned business exclusively uses ecologically certified salmon sourced from New Brunswick. The Arctic char is raised in Charlevoix, adhering to the strictest standards at the Fumoir Saint-Antoine breeding center.
